Strawberry Bread
Our friend John wrote us that he and his wife went to a strawberry farm. They had a great time and brought home loads of strawberries. Then his wife made strawberry bread. Strawberry bread? I’d never heard of it before.
I did some investigation and then gave it a go. It’s lovely! I’m not sure how I made it this long without hearing about this yummy breakfast bread. Heck, it’s so good that you could put some whipped cream on top and call it dessert.
Strawberry Bread
1 cup butter
2 cups sugar
1 teaspoon vanilla extract
4 eggs
4 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 cups fresh strawberries, crushed or diced
Directions
Heat oven to 350 degrees. Grease 13x9x2-inch baking pan.
Place butter in large microwave-safe bowl. Microwave at MEDIUM (50%) 2 to 2-1/2 minutes or until melted. Stir in sugar and vanilla. Add eggs, one at a time, beating well with spoon after each addition. Add the dry ingredients alternately with strawberries to creamed mixture.
Pour batter into prepared pan. Bake for about 1 hour.
The Man of the House put the bread into single-serving, foil-wrapped packages and froze it. This prevented us from inhaling it in a single evening. (We were tempted. Believe me!) The bread froze well and we enjoyed it for breakfast for the next several days. We set the oven at 320 degrees and put our little foil packages of deliciousness in for 20 to 25 minutes. Heaven!
