Corned Beef and Cabbage
For Saint Patrick’s Day I cooked corned beef and cabbage for the first time. I followed a recipe at Recipezaar for corned beef and cabbage in the crock pot. I cooked it on low for ten hours. To be honest, I was a little alarmed during the day at the strong smells coming from the crock pot. The Man of the House assured me that it smelled fantastic, but I wasn’t convinced the experiment was going to turn out.
At the end of the day I was pleasantly surprised. Corned beef and cabbage is a tasty thing indeed. And the sandwiches made from the leftover corned beef are wonderful. We’ve decided to make this an annual tradition. In fact, The Man of the House liked the corned beef sandwiches so much . . . dramatic pause . . . that they might become the official Mighty Super Bowl Sandwich.
