Black Bean and Corn Salad
I wasn’t quite sure about this recipe when I read it. But I needed a salad and I had the most of the ingredients so I threw caution to the wind and went for it. I’m glad I did. The salad is easy to make and very good. The lime juice and chili powder give the salad an exotic taste that I really like.
Black Bean and Corn Salad
- 1 (14 oz) can of black beans – drained and rinsed
- 2 cups of frozen corn
- 1/2 bell pepper – chopped
- 3 Tablespoons lime juice
- 1 Tablespoon olive oil
- 1 teaspoon chili powder
Throw the frozen corn in the colander. Put the black beans on top. Then you can multi-task by thawing the corn and rinsing the beans at the same time.
Toss everything together in a bowl and let the flavors mingle for a few hours. Give it a stir and serve it up.
