Aunt Gayle’s Toffee
I brought this to an office party once. A coworker came up to me and said, “Tell me how you make this! No don’t, I know it will be hard and I’ll be depressed.” She rolled her eyes in ecstasy as she nibbled on the toffee and then wandered off in a haze of toffee happiness.
The rule here is don’t assume that just because something is wonderful beyond belief that it’s also hard to make.
Aunt Gayle’s Toffee
40 – 48 soda crackers
1 Cup butter
1 Cup brown sugar
12 oz. bag of chocolate chips
Preheat oven to 350 degrees.
Line a large cookie sheet (use one with sides) with tin foil. Lightly oil or use Pam to coat the tin foil. Lay the soda crackers on the foil so that they cover the pan in a single layer.
Combine the butter and the brown sugar in a pan. Carefully bring it to a boil stirring constantly to prevent burning. Once it’s boiled pour evenly over the soda crackers.
Put the soda crackers in the preheated oven for 5 minutes. When it’s done take it out of the oven and sprinkle the chocolate chips over everything. Wait 10 minutes and then spread the chocolate chips with a knife (they’ll be soft by then) to evenly coat the top of the toffee.
Let toffee cool and then break into chunks and eat.
