Chicken Tetrazzini
This is heaven on a plate! The first time we ate this we looked at each other in disbelief. How could anything so easy be so good?
Chicken Tetrazzini
7 ounces spaghetti – broken into small pieces then cooked and drained
1/4 Cup butter
1/4 Cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 Cup chicken broth (I use a chicken bullion cube in a cup of hot water.)
1 Cup whipping cream
2 Tablespoons sherry
2 Cups cubed cooked chicken
1 can (3 ounce) sliced mushrooms – drained
1/2 cup grated Parmesan cheese
Start out by heat oven to 350 degrees and cooking the spaghetti.
Next melt butter over low heat. Blend in flour, salt and pepper. Keep cooking and stirring until the mixture is smooth and bubbly. Remove from heat. Stir in broth and cream. Heat to boiling, stirring the whole time. Boil for one minute. Add the sherry. Stir in the spaghetti, chicken and mushrooms. Pour into a square baking dish. Sprinkle with Parmesan cheese. Bake at 350 for 30 minutes.
Variations
You can use turkey instead of chicken.
