Mexican Medley
This dish is easy to make and very, very good. In fact it’s what we served for Christmas dinner.
Mexican Hot Dish
1 pound bulk pork sausage
1 cup finely chopped onion
1 cup finely chopped green pepper
7 or 8 ounces uncooked wide noodles (about 4 cups)
1 can (1 lb.) tomatoes
1 cup sour cream
¾ cup water
1 Tablespoon sugar
2 teaspoons salt
1 to 2 teaspoons chili powder (The last time I made this I used four teaspoons of chili powder. Delicious!)
In a large skillet, cook sausage, onion and green pepper until meat is browned and onion is tender. Drain off excess fat. Stir in remaining ingredients. (Yes, even the sour cream.) Cover. Simmer 25 to 30 minutes or until noodles are tender. Give it a stir every 5 to 10 minutes while it’s cooking.
